So a few years back I found that my usual sources of hamantashen all set off my stupid autoimmune disease (I assume this has to use with whatever margarine they are using). as a result I have been attempting to make my own but they all taste wrong to me. (....I suppose this could have to do with the margarine I am using?) The recipe I've tried that is closest to what I remember is this one: https://yaykosher.com/classic-hamentashen/ 

anyway, I am wondering if anyone has a recipe they like that they can share? Or tips? Or is it possible there are regional trends in hamantashen such that I'm going to need a local recipe?

I liked Smitten Kitchen's recipe, which called for butter and cream cheese, which I have no idea if that suits you on a nostalgic or autoimmune or otherwise dietary level (obviously not pareve at that point), but they were good.

My grandmother's recipe uses butter and no lemon. They're brushed with warm honey before baking, so maybe that could be a contributing flavor though.

It's not impossible, but then honey seems to me like a hard flavor to mistake for another?

When you say anise, I've definitely heard that compared to other flavors in the cooking and baking videos I've watched, but I can't remember what the others are of course.
