hamantashen

So a few years back I found that my usual sources of hamantashen all set off my stupid autoimmune disease (I assume this has to use with whatever margarine they are using). as a result I have been attempting to make my own but they all taste wrong to me. (....I suppose this could have to do with the margarine I am using?) The recipe I've tried that is closest to what I remember is this one: https://yaykosher.com/classic-hamentashen/ 

anyway, I am wondering if anyone has a recipe they like that they can share? Or tips? Or is it possible there are regional trends in hamantashen such that I'm going to need a local recipe?

I liked Smitten Kitchen's recipe, which called for butter and cream cheese, which I have no idea if that suits you on a nostalgic or autoimmune or otherwise dietary level (obviously not pareve at that point), but they were good.

I've tried that one, and it's tasty but not-right. I suspect that all the local ones I have had in the past are pareve (the two that come with ingredients lists are for sure; the bake-sale-style ones I'm not sure but I would guess are).

things I have determined from my experiments over the past several years: butter is def. wrong. lemon is def. 1000% needed. there's a very slight other flavor in my memory, but it might be infused from the filling and not in the dough.

I'm considering trying this one: https://allwaysdelicious.com/hamentashen/ which is an oil dough instead of using margarine.

My grandmother's recipe uses butter and no lemon. They're brushed with warm honey before baking, so maybe that could be a contributing flavor though.

oh, I wonder!

in my head I keep thinking "it's like someone waved aniseed around in the room", the flavor note I can't place, but it's not anise on the tongue. I don't know what my mouthbrain* is trying to tell me

* this is a coworker's term for the ability to taste things in your head and I love it

It's not impossible, but then honey seems to me like a hard flavor to mistake for another?

When you say anise, I've definitely heard that compared to other flavors in the cooking and baking videos I've watched, but I can't remember what the others are of course.
